Editorial

If you ask ANYONE that knows me, about the last thing they could ever see me doing, let alone loving with a passion, would be cake decorating! Possibly even anything connected with a kitchen! But here I am, at the ripe old age of forty(mumble mumble)something, and I'm a Cake Decorator.

I spend hours reading, researching and googling information, photos and tutorials about cakes. In the last year, CakesDecor has become my second home, so it is an honour and a privilege to be involved in extending the wonderful CakesDecor family.

Now, I’m not sure about you, but my love of all things cake, finds me doing some pretty crazy things.  Just this last weekend, it found me climbing up on a dais amongst people happily eating their meals to take a photo of this AMAZING fish skeleton sculpture at a seafood outlet in Sydney at Star City Casino.

So there I was, all dressed up, in my very high heels (what was I thinking) out on the town with the grown-ups for the first time in as long as I can remember, and what was on my mind? How amazing would that look on a cake and how would I put it all together! I’m not sure who thought I was crazier…my friends or the startled diners but I think you’ll agree…it was totally worth it right?

What's Happening

It's a wonderful time to be a Cakes Decor Gazette subscriber! For those Cake Decorators out there that want to stay in the loop, have their finger on the pulse, this is the place to be. I’m a self-taught, stay at home Mum of three Beautiful Girls. Originally from NZ but I have lived most of my life in Australia where it’s nearly always sunny and warm. I started decorating in March 2011 for my youngest daughter, Jasmine’s 1st birthday. I had never baked a cake before then and was instantly bitten by the bug!

Cake This Tute

Hello Lovelies,

One of our regular articles will be a tutorial feature chosen from those posted on CakesDecor.com, where you can pick up extra tips for a technique you may already use or learn something totally new. Then we will encourage our readers to make a project using what they have learned from that month’s tutorial and share their exciting results with us. So all you clever decorators out there who have fabulous tutorial ideas, all you have to do is post them and yours might be featured in the coming months!

The world has quickly fallen in love with the unique Australian style of Cake Decorating. Cakes with lovely towering 4”-5” tall, fondant encased tiers with beautiful, super sharp edges are now instantly recognisable as being made in the Australian style. These wonderful, crisp edges are achieved using chocolate ganache rather than buttercream, and several different techniques, one of them being ‘The Upside Down Ganaching Method’.

I personally use one of the original methods by the amazing Michelle Rea of Inspired by Michelle Cake Designs. Pioneers of this wonderful medium such as Planet Cake, Michelle Rea, Faye Cahill and Eleanor Heaphy of Cakeage Cake Craft have all perfected their own versions of using ganache to achieve super, cut your finger, sharp edges. Luckily as a CakesDecor.com subscriber, you can easily try ganaching using this tutorial by Jo of Torta Couture. I will also try the Upside Down Technique over the next month and we can then all share our results.

Following on from my adventure to obtain a picture of the Fish Skeleton Sculpture I thought it would be interesting for us to have a look at one of our most popular forum topics…’You know you’re a cake decorator if:’ Here are just a couple of my favourite answers.
